Crafted exclusively from estate-grown Pinot Noir grapes, this gastronomic rosé displays refined aromas of wild flowers and fresh red berries, elegantly complemented by subtle notes of vanilla and toasted oak. The palate is fresh yet textured, combining vibrant acidity with remarkable depth, silky tannins, and a creamy mouthfeel. Complex, balanced, and persistent, it is a sophisticated rosé designed for the table, pairing effortlessly with refined cuisine throughout the year.

Winemaking

The grapes were fully destemmed and gently pressed using a pneumatic press, with only the free-run juice selected for fermentation. Alcoholic fermentation took place at a controlled temperature of 16°C, with 70% of the must fermented in stainless steel tanks to preserve freshness and varietal purity. The remaining 30% was fermented in French oak barrels, equally divided between second-fill and new barrels. The barrel-fermented portion remained on its lees for two months, enhancing texture, complexity, and the seamless integration of oak.

An excellent partner for grilled salmon, roast guinea fowl, duck breast, herb-crusted pork loin, and roasted Mediterranean vegetables. It also complements mushroom risotto, charcuterie, soft-ripened cheeses, and dishes featuring wild mushrooms or truffle. Its elegant structure, subtle oak influence, and vibrant freshness make it a versatile choice for contemporary British and European cuisine.
